Taimeekstrakte saadakse toortaimede erinevatest osadest ekstraheerimise teel, näiteks sobivalt valitud lahusti, näiteks vee, etüülalkoholi, glütseriini, glükoolide või taimeõli abil. Taimeekstraktide saamiseks sobivad terved taimed või teatud taimeosad (viljad, lehed, juured, koor, varred, oksad, seemned või õied).
Taimeekstraktid sisaldavad mitmesuguseid bioaktiivseid ühendeid (polüfenoole, karotenoide, kiudaineid, eeterlikke õlisid, polüsahhariide, alkaloide ja valke), millest enamikul on bioloogiline toime.
